There are so many delicious ways to enjoy your loaf of Honey Oatmeal Bread. It's delicious with butter or Miracle Whip dressing and deli meat, sliced pickles and lettuce, open face or sandwiched with double slices of bread.
Try your Honey Oatmeal Bread toasted, spreading butter on top to melt. Add a homemade or your favorite store-bought blueberry, blackberry jam, strawberry or orange marmalade jam. It’s delicious!
Instead of butter on a toasted slice, spread soft whipped cream cheese on it and top it with a delicious jam. Very good for breakfast or with afternoon coffee.
Make a substantial grilled cheese sandwich over medium heat on the stove. Slice your bread thick in two slices and spread one side of each with soft butter. Add slices of cheese in the middle (on the unbuttered sides) of the sandwich. Brown the buttered sides of it on a griddle or in a pan, on medium heat, flipping it after the first side has turned a golden brown.
Or spread one slice of the Honey Oatmeal Bread with blueberry jam. Add slices Brie Cheese in the middle and brown it on both sides as you would a grilled cheese sandwich. Yum!
This is a recipe for one loaf. Feel free to double it for two loaves. Freeze one if you like.
The honey makes this a little sweeter than a boring white loaf of bread. Plus, the old fashioned oats and oatmeal flour add a delicious flavor.
I don't keep oatmeal flour in my pantry, so I just put 3/4 cup of old fashioned oats in my food processor and grind finely. It makes just over 2/3 of a cup of flour. It's the perfect way to have oatmeal flour without having to keep some on hand.
Prepare your bread pan:
-This recipe is for one loaf of bread.
-Lightly butter the sides and bottom of a 9”x5” bread baking pan. I also like to make one round loaf and bake it in a 9-10” pie pan, lightly buttered on the bottom and sides.
Preheat your oven:
Preheat the oven to 350F degrees a few minutes before you are ready to bake the bread.
Gather up your Oatmeal Bread Ingredients:
1 C Milk, warmed to a simmer
½ C Old Fashioned Oats
2 T Butter, soft
4 T Honey
2 ¼ t Yeast, dry (not instant)
¼ C Warm water
¾ t Salt
2/3 C Oatmeal flour
1 ¼ C Flour
Egg Wash:
1 Egg white
1 T Water
1 T Old Fashioned Oats for topping
NOTE: If you do not have any oatmeal flour, take about ¾ cup of Old Fashioned Oats and grind very fine in
Mix, knead, rise and bake:
-In a small to medium heat safe bowl, heat the milk to a simmer in the microwave. Just bring it to a simmer. Do not burn it.
-In the mixing bowl of your stand mixer with the dough hook attached, mix the simmered milk, Old Fashioned Oats and soft butter. Scrape down the sides and mix a few seconds more. Let stand for 1 hour, covered so the oatmeal softens. It should be room temperature.
-Add the yeast, warm water and salt. Stir well to combine, scraping down the sides. Let stand another 20 minutes.
-Add the Oatmeal flour and stir to combine and scrap down the sides.
-Add the flour slowly and knead it so the everything is combined well. After 2-3 minutes, the dough should begin to separate from the sides. If not, add a little more flour, one tablespoon at a time until it does. Be sure to scrape down the sides periodically. The dough should be soft but not sticky.
-Knead it in the mixer about 4-5 minutes until elastic.
-Place the bread dough in a buttered dough, cover it and let it rise about one hour until double in size.
-Punch the dough down and form into a loaf to fit your prepared bread pan.
-Whisk your egg white with the water to mix well. Then brush it over the top of the bread just it’s all lightly covered. You probably will not use all of the egg wash.
-Sprinkle some of the Old Fashioned Oatmeal over the top and lightly press into the egg wash.
-Cover it lightly with plastic wrap and place in a warm place to rise, about one hour.
-When the dough has risen about 1” over the top of the rim of the pan, it’s ready to bake.
-Carefully peel the plastic wrap off.
-Bake at 350F degrees for 30-40 minutes. The bread should be golden on top.
-Test it for doneness by tapping on the top. If it sounds hollow, it should be done.
-Cool the loaf of bread in the pan on a rack for 15-20 minutes.
-Tip the loaf out of the pan and allow the loaf to set on the rack on it’s side to completely cool.
