My sister makes the BEST Angel Food Candy!
My sister's homemade Angel Food Candy is so delicious! She is probably the best home baking chocolatier I know. She has the knack to temper the chocolate properly and the patience to create the most beautiful and delicious chocolates around.
Every Christmas and Thanksgiving Day family get together she would arrive with the most beautiful array of homemade chocolates - at least 6 or 8 varieties, some with nuts, decorations, chocolate covered cherries, maple inside, and more. They were masterpieces!
Prepare the pans:
- Have a large sauce pan for cooking the candy on the stove top.
- Lightly brush a large rimmed cookie sheet with butter. Or, brush with butter and line it with parchment paper.
Angel food candy Ingredients:
1 cup sugar
1 cup dark corn syrup
1 T Baking soda
1 t Vanilla extract
Get the candy cooking:
- Cook and stir over medium heat till sugar dissolves.
- Continue to cook without stirring until it comes to the hard ball stage or reaches 300 degrees on the candy thermometer.
- Remove from heat and quickly stir in 1 Tablespoon baking soda. It will foam into the expected Angel Food Candy.
- Quickly stir in the 1 teaspoon vanilla.
- Pour into buttered cookie sheet pan with sides.
- Do not spread.
- Let it cool completely and break into bite size pieces.
- Dip in melted chocolate.
Storage:
- Store in tins in a cool place like a cool pantry.
